    6

Heated slowly in oil with a strip of peel until they soften.

  • Cultured butter & seeded ryeV

    5

Bread baked each morning; butter churned in house and salted heavily.

  • Chicory, pear, walnut, blue cheeseVN

    11

Bitter leaves and sweet fruit, dressed with cider vinegar and cream.

02

From the Wood Oven

Cooked over oak and beech. Plates leave the oven in the order they finish, not in courses.

  • Flatbread, confit garlic, thymeV

    7

Blistered at the mouth of the oven and brushed with the garlic oil.

  • Blistered greens, anchovy crumb

    10

Whatever is best that week — usually cavolo nero or young kale.

  • Whole leeks, romesco, toasted almondVGN

    12

Charred black outside, steamed sweet inside. Eaten with your hands.

  • Clay-pot beans, tomato, rosemaryVGGF

    13

Started the night before and left in the cooling oven until morning.

  • Half chicken, lemon, bayGF

    21

Brined for a day. Allow twenty-five minutes; it is worth the wait.

03

Larger Plates

One each, with a side or two between you.

  • Line-caught fish, charred chicory, citrus butterGF

    24

The day's fish, cooked on the bone. Ask the room what has come in.

  • Pappardelle, slow beef shin, horseradish

    22

Shin braised for six hours in red wine; pasta rolled the same day.

  • Roast squash, barley, sage brown butterV

    18

Can be made vegan with olive oil in place of the butter — just say.

  • Dry-aged sirloin, bone marrow, watercressGF

    29

Aged five weeks, rested by the oven, carved and served pink unless asked.

  • Mussels, cider, sea herbsGF

    19

A deep bowlful with plenty of broth. Bread to mop is included.

04

Sides & Greens

Portions are generous; two sides is plenty for three people.

  • Duck-fat potatoes, rosemary saltGF

    6

Crushed, then roasted hard until the edges shatter.

  • Bitter leaves, mustard dressingVGGF

    5

Sharp and cold — the right thing next to anything from the oven.

  • Bread & butterV

    4

  • Three cheeses, quince, oatcakesV

    12

A hard, a soft and a blue, cut to order and left to warm a little.

06

Glass Pours

Priced by the glass and the bottle. Anything open by the glass can also be poured as a half.

  • Field & Furrow — Riesling

    gls8btl34

Dry, high acid, faint kerosene. Good with the cod roe.

  • House White — Grenache Blanc

    gls7btl29

Round and orchard-fruited. The safe pour for a mixed table.

  • Quill Red — Gamay

    gls8btl32

Served cool from the cellar. Drinks well with everything on 02.

  • Old Mill — Nebbiolo

    gls12btl52

Tannic and long. Order it with the sirloin, or not at all.

  • Pét-Nat Rosé — sparkling

    gls9btl40

Cloudy, dry and lightly wild. Opened carefully, for obvious reasons.

07

Low & No

Made with the same care as the wine list, and poured into the same glassware.

  • Sea buckthorn & sodaVG

    5

Sharp, orange and faintly savoury. The best aperitif here without alcohol.

  • Cold-brew tonic, orangeVG

    5

Long, bitter and cold — good at the end of a heavy plate.

  • Verjus spritz, thymeVG

    6

Pressed unripe grape with soda; all the acidity, none of the wine.

  • House kombucha, rhubarbVG

    5

Fermented in the cellar and pressed with early rhubarb.

  • Filter coffee, or a pot of teaVG

    4

Coffee is a single-origin filter; tea is loose leaf, three to choose from.
